I barely stopped this weekend – both good and bad, since I got a lot done, but I didn’t get to do nearly all that I wanted, including seeing a friend from high school’s show that he wrote and directed. TOTAL bummer.
I started off making gluten-free pies with JW on Friday night – fun, and they turned out well, in my opinion. JW found a recipe for the crusts on Ginger Lemon Girl , a pretty cool site for gluten-free recipes. However, it turned out suuuuper dry (a fairly common predicament for gluten-free baked goods), so we had to turn to the Gluten Free Bible (aka Carol Fenster’s 1000 Gluten Free Recipes ) to fix it up. We ended up adding more cream cheese, an egg yolk, a teaspoon of vinegar and 2 tablespoons of milk – seemed to do the trick! All in all though, I really enjoyed them – we made pumpkin and apple pie, and both were really delicious.
Saturday was a marathon day of not being home – the husband and I ran errands like crazy people, and then drove 2 1/2 hours to meet our puppy…or not. The litter up at Breezemore turned five weeks old this weekend- SO adorable, SO fun…but in the end, neither of the two boys had a personality that we really connected with. One was still quite shy (he just hadn’t gotten his confidence with people yet) and the other was a little bit too much alpha energy for us. The closest we got was a copper-trimmed girl who was sweet, playful and snuggly, but 1) she was a girl, and we’d both prefer a male pup and 2) she really liked me, but seemed indifferent to the husband.
Basically, we both didn’t feel confident that any one of those puppies were “our” dog, so we decided to wait until the next litter – which will be ready to come home on New Year’s! Not too long of a wait, and it makes the holiday season a little easier to manage without having to figure out what we’re going to do with a very young puppy.
The rest of the weekend was lost in a myriad of chores and Christmas shopping, and I am fairly exhausted. Definitely looking forward to the Thanksgiving break…just have to get through two days of training at work first!
